It was a long winter and I am looking forward to a great summer but the one thing I do love around Christmas time are rainbow cookies, an Italian favorite and my husbands too. This cake just takes the prize, IMAGINE your favorite cookie as a cake! I saw this awesome recipe on Always Order Dessert by Alejandra Ramos, she is one creative cookie/cake.
